I Cannelloni
A delicious first course of the Teramo cooking tradition

Directions:
Pour the flour into a fountain and add 4 whole eggs and water depending on desired consistency. Knead the dough until it becomes smooth. Roll it out and cut it into 20 cm. squares. Boil in salted water then drain and dry them off with a cloth. Prepare the stuffing separately by mixing together the minced meat, 2 yolks, nutmeg, salt, pepper and parmesan. Butter an oven dish, place the stuffed cannellonis in it and dress them with meat sauce, parmesan and small pieces of butter. Slightly bake in oven for about 20 minutes.
- Ingredients (for 6 servings):
500 gr. flour, 6 eggs, 500 gr. assorted meat (minced lean pork, chicken breast and lean beef), 100 gr. grated parmesan, nutmeg to taste, a pinch of salt and pepper, whole butter and in pieces.
