Pepatelli
These tasty biscuits are typical of the Province of Teramo and in some way recall the mediaeval “pan pepato” (peppered bread)

Directions
Mix the honey (previously melted on the flame), the cocoa, the orange peel and the pepper.
Pour the flour, shape it into a fountain and mix it with the butter.
Add the whole almonds.
Divide the dough in big cannelloni forms, pat in order to flatten them and let them bake at moderate heat.
Remove from the oven, while they are still hot, cut them with a sharp knife into 1 cm. thick slices.

Tip:
It is better to buy peppercorns and grind them before using.

Ingredients (about 3 kg.):
1½ kg. flour, 1½ kg. honey, 2 tablespoons cocoa, 500 gr. whole almonds, grated peel of 2 oranges, 1 abundant tablespoon grounded pepper.
