The area of production is the territory of the municipality of Valle Castellana.

The fruit has an oval elliptical form, the pericarp is shiny brown with reddish stripes, the episperm is thin and comes easily away from the seed and the flesh has a particularly pleasant flavour.

Once the chestnuts have fallen from the tree, the husks are beaten and then placed into the ricciaie, special pits where the chestnuts are left until they open. These chestnuts which are directly sold can be kept into the ricciaie up to December.

The maintenance of chestnut woods and the picking of the fruits is deeply rooted into this territory and testimonies of these activities date back to the 13^th century.
